Potato Stew with Vegetables and Spices

Ingredients

3 pounds potatoes, diced

1 medium onion, minced

4 medium tomatoes

2 teaspoon mustard seeds

1 teaspoon ground ginger

1 teaspoon garam masala

1 teaspoon turmeric

½ teaspoon ground cumin

½ teaspoon chili powder

¼ cup dried chili flakes

3 tablespoon Olive oil

Salt and ground black pepper to taste

Preparation

In a bowl mix spices expect of mustard seeds: ginger, garam masala, turmeric, cumin, chili powder.

Prepare vegetables, wash, peel and cube potatoes, mince onion.

Wash tomatoes, squeeze out seeds and chop them into little pieces.

Hit some olive oil, add mustard seeds and cook until popping.

Add onion; cook for near 5 minutes until transparent.

Add spices and cook for 3-4 minutes to get the flavor going.

Add cubed potatoes. Stir and make sure that every cube gets into spice mixture.

Add diced tomatoes.

Salt and add some ground pepper to taste.

Cook for at least 4-6 hours or until ready.
